Almond Skillet Cake has been a favorite at Family Camp Coffee Hour for many years. It is very easy to make and always wows a crowd! Thank you to long-time and dearly loved volunteer, Doris Thompson for divulging her recipe to us! Doris and her husband Parker have embodied the love of Christ here at Camp for several years, spending their summers in the Trailer Park while serving our Kitchen Staff and Guests.

Almond Skillet Cake ~ from the kitchen of Doris Thompson

¾ c. butter or margarine 1 ½ c. flour
1 ½ c sugar 1 tsp. almond
2 eggs sliced almonds
Pinch salt
Melt margarine, add sugar. Beat in eggs one at a time. Add flour, salt & almond.
Pour into heavy 10” iron skillet lined with aluminum foil (spray foil first).
Cover batter with sliced almonds & sprinkle with a little sugar.
Bake 350 degrees 40-50 minutes
